Route legal mail: contracts, disputes, GDPR requests

Sorts legal-related emails by type. Contracts and signature requests go to their folders, disputes are flagged and announced, and GDPR rights requests are logged in a Table with a one-month answer deadline. Table columns: Sender, Subject, Due date. The AI sorts only; every legal answer stays with a person.
